We will be pairing the following International cheeses:
Leonora: A goat cheese from a small producer in León, Spain, Leonora is an exciting new import for goat cheese gourmets. This ash-covered cheese is made with the milk from cheese maker Oscar's own herd of Alpine goats. Leonora is a brick shaped, natural-mold-rind cheese which envelops a compact white paste. Although the center of the cheese is firm, it melts smoothly on your tongue. The small-batch production is evident from the layered, complex flavor and long, lingering finish. The edible rind adds a sharper note to the cheese, but even fans of mild cheese will love Leonora's delicious, grassy core. Smooth and full-bodied with just the perfect balance of acidity and tanginess.
Ossau-Iraty: Amidst the scenic rolling mountains of the Pyrenees, the geographic border dividing France and Spain, lie vast pastures providing fertile grazing for milk-giving sheep. It is from this milk that Agour, a family company steeped in tradition, creates this magnificent cheese. Aged for a minimum of six months, this AOC protected cheese is of a quality and complexity rarely seen. A slightly dry texture gives way to a creamy, buttery quality, and the flavors hint at a subtle mingling of herbs and fruit, with slightly nutty undertones. A real gem, and one you're sure to enjoy.
Tellagio: The softest, creamiest member of the famous Italian Stracchino cheeses, Taleggio was first made in the valley of the same name, located in the historic province of Bergamo. Taleggio made its debut in the international cheese markets after World War I, around the same time as its cousin Bel Paese. Its rough, rosy crust (inedible), pale yellow interior, and rich and buttery, fruity, slightly salty flavor are what give Taleggio its individuality. Taleggio's soft, incredibly flavorful interior is creamy in texture and has a pungent aroma. Perfect paired with bold red wines like Sangiovese, melted into polenta, or just served with crusty bread. The cheese imparts the essence of the Italian countryside in such a demonstrative manner that you could swear you were sitting among the cows on a grassy hillside in Lombardy.
Comte: Made from a centuries-old recipe, 70-pound wheels of Comté have been produced since the reign of Charlemagne, when there were no separate entities named France and Switzerland. Although Swiss Gruyere may be better known, the French variety is no less special. Created by local villagers in alpine dairies called "Fruiteries", its milk comes only from Montbeliarde and Tachete de L'est cows. Contributing to Comté's unique flavor, morning and evening milkings are mingled before the cheesemaking process. For transforming the milk into curds, the cheesemaker must only use natural ferments to receive the Comte seal. During aging, the curd is cooked, then pressed, with a natural brushed rind that comes from weekly care.
When it comes to acquiring flavor, Comté cannot be hurried. These Reserve wheels are aged for one year, resulting in a sweet and nutty masterpiece with less bite than its twin from Switzerland. Distinguished by a black label, this Comté is hand-selected, ensuring the highest quality.

Silver Lake Riesling paired with Gorgonzola Onion Soup, a blend of garlic, onion, prosciutto, and Gorgonzola cheese with Italian herbs and spices simmered in a beef broth.

Silver Lake Chardonnay paired with a Crab Arancini with a side of marinara made with risotto rice and Dungeness crab rolled into a ball covered with bread crumbs and deep fried until golden brown.

Silver Lake Reserve Cabernet Sauvignon paired with Porchetta, a pork belly rolled with fennel pollen, rosemary, garlic, and parsley and baked until crispy.
